BANANA or APRICOT BREAD
This recipe was from my friend, Mig's mother, Violet Gaspar. She was friends with many of the old Hawaiian families and this recipe was from the Cook Family.... yes, as in a descendant of Captain Cook.
Beat until creamed:
- 1 c. sugar
- ½ c. butter
- 2 eggs beat in one at a time until mixture is fluffy
- 2 c. flour
- 1¾ c. mashed very ripe bananas or apricots
- ½ tsp. soda
- ¼ tsp salt.
Fold together until blended. Bake in greased loaf pan or ring.
350° - 45 minutes or test done.
