Apricot Almond Cardamom Coffee Cake

A version of Cardamom Coffee Cake that won the Better Homes & Garden's Recipe Award 20 years ago.

Ingredients

Cake

A. Dry Ingredients

Mix in mixer with whisk on low, dribbling in oilive oil

  • 3 c unbleached white flour
  • 1 3/4 c granulated sugar
  • 3/4 c light olive oil
  • 1 tsp ground cardamom
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

remove 1 cup of dry ingredients, put in small bowl

B. Liquid Ingredients

measure & mix in large 4 c. measuring cup

  • 1 3/4 c mashed, ripe apricots
  • 1/4 c heavy cream or buttermilk
  • 1 beaten egg
  • 1 tsp baking powder
  • 1 tsp baking soda

mix together and add to dry ingredients (minus 1 cup) and fold in thoroughly

C. Topping

In small bowl mix the following

  • 1 c dry ingredients
  • 1 tsp cinnamon
  • 3/4 c chopped almonds or hazelnuts
  • 1/2 tsp almond flavoring (optional)

Instructions

  1. Combine all ‘A.’ ingredients thoroughly. 

  2. Remove one cup of mixture A. into small bowl and combine with C. ingredients to use as topping. 

  3. Mix remaining A. ingredients with B. ingredients. 

  4. Pour into PAM sprayed and flour dusted  9 X 13 bake pan. 

  5. Cover with topping.  Bake in 350° about 35 min. or untildone.
