
Easy Peasy Cranberry Sauce
Once you make your own cranberry sauce, which is so easy, you will never go back to store bought. This of course goes with turkey, but is delightful on pork chops, or ham, or to liven up a bowl of cottage cheese. Instead of a bottle of wine, take a jar of this Cranberry Sauce to Christmas dinner as a gift to the Host.
Ingredients
- 1 32 oz large bag cranberries washed and picked over
- 3 cutie Mandarins whole, washed & chopped fine
- 1 huge or 2 normal cooking apples (grannies or romes) OR (optional) 2 large, green Anjou pears, not quite ripe
- 2 ½ c. sugar
- 1 large finger of ginger peeled & grated
- 2 cinnamon sticks
- 6 whole allspice
- 2 c. water

Place all ingredients in small pressure cooker, stir a couple times, lock lid, bring up heat, exhaust, put on weight, and pressure cook on medium-plus heat for 15 minutes. Cool, open cooker, stir to pop berries and smooth, and to pick out 2 cinnamon sticks and the 6 allspice berries.
Optionally, this is a great recipe for the crockpot. Cook in crockpot 1 hour on high, and 6+ hours on low until sauce is thick. Stir occasionally to pop the cranberries. You can put the allspice into a cheese cloth or tea infuser to make it easier to remove them, but do not neglect the important stirring. That's what makes the sauce smooth.
Other options: add 1 pint of raspberries for a real treat.
